I have heard of the night markets in Taiwan and how they are great for street food. When I first visited Taipei years ago, there didn’t seem to be such a thing as a food street. Perhaps I wasn’t that greedy back then and that I am more aware of such things these days. The Shilin Night Market is arguably the largest and most famous of the night markets in Taipei. There is one main street where all the stalls are found and one can just walk up and down the street looking for interesting food.

With all this competition, you might think that it would be very difficult to earn money here. I think it is all about supply and demand. If a stall is too popular, then there will be a long wait. Customers might not be too inclined to wait forever for a black pepper bun and instead head off to the stall that sells fried squid. I found myself in that situation a few times though I still queued up for the obviously more well known ones. The black pepper bun was certainly a nice treat with the bun baked right there. It is really an amusing sight to see people queuing up for a popular treat with food already in their hands. I soon found myself also doing the same thing, after all, I can’t be here all the time.
